OP what I would have done would have been to take a voltmeter and do some signal tracking on the cable to determine what connectors are of interest then soldering the proper connections.....However it just came to my mind that most probably your car has a male connector the goes into an iPod right? (I have never used an iPod in my life though so keep that in mind if I am wrong)....so what would be logical is to try and create a Female connector so that you end up with an iPod Female - 3.5mm male.......well I didn't think I would find any female connectors for iPods but a quick look up before suggesting any drastic measures lead me to this cable......

That type of cable right there is what you need......however....if you want to control your non-iPod MP3 devices from the console......you will need to have a good deal of circuit hacking experience to get it done and it will be a PITA but still fun.
I would be glad to help you / steer you in the right direction to do it because I was thinking of doing the same to my JVC head unit so that it supports my MP3 player....hehe but it will be a tedious hack heh.
