No Multiple kids profiles (one MS Live account) on Xbox one?

Console noob here. My kids no more about this stuff than I do I guess, but I can't tell as of yet. We just got a new XBone and basically I am trying to let them create their own profiles (or at least "avatars" or what have you). So we all can't sign in under my xbox live account with multiple people? Do we all need our own emails addresses? Not sure how/why they would all need their own accounts if some kids are like 7, etc. But while 360 let us do this, I can't figure it out on the Xbone. Any help?

(Edit: So it looks like I can create multiple family members on one Live account, but they do in fact, need their own email address?) Do I have this right?

The email address is a microsoft account so your friends list etc carries over to other consoles you log in on including WIndows 10 PCs. Each user would have a separate account. You don't share friends lists etc. You only share the games installed on the main console afaik.
