*nix or Windows free webpage content editor

Putting together a site (simple xhtml/css & some VERY light js) for a friend's new business and wanted a SIMPLE web accessible content editor for his mom to do daily updates of events, menu items, specials, etc. She doesn't need (or get) to change ANYTHING about the page itself...JUST add to the event feed, change items (with some pics) and prices on the menu page, and change the daily specials.

Most of the prepackaged full cms's that I've found do so much more than we need it seems stupid to use them. The closest I've found is SnippetMaster, but of course only the Pro (ie paid) version has all of the features I think we want (plus still more that we don't need).

Is there a free, less featured cms out there for what I want, or even just enough loose bits of php code (or anything else) that can handle it? I really don't want to tackle making my own for something this small that I'm not even getting paid for.

I had planned on putting it all on a lamp box we have, but if absolutely necessary I could drop a windows os on it.

I personally think that Joomla/Mambo works great for beginners, as long as you hand hold them a bit at first. I also really like Website Baker, but I haven't really kept up with the newer versions.
