Trying to get one of these boards, is there a big difference between these chipsets?

They're so cheap now that it doesn't matter. Get the NF7-S or DFI NFII or A7N8X DELUXE.

The ULTRA I believe is Dual Channel DDR Support while the Regular is Single Channel Only.

Go with the Dual Channel chipset. 3%-5% increase on average but up to 16% in certain situations.
