Both the mwave page and Epox's say that Raid 5 is supported, but it is not listed in the specs - will that be a fimware update or what?

Raid 10 or 1+0 is a combination of the two, striping and mirrioring. It needs four drives minimum, more can be used. It setups up two Raid 0 arrays, and mirriors them for data integrity.
Raid 5 is a parity calculating (big words i don't know what mean) array. Instead of mirroring for data integrity, it spreads the data accross a minimum of three drives. If one drive is lost, the data can be reconstituted. Oftentimes a drive is kept as a 'hot spare', so that the array will automatically rebuild.

Are Epox any good?

I've never used one of their boards myself, but in general people seem to have fairly mixed opinions about them. IIRC they were one of the companies that had problems with bad capacitors a few years ago, but these days I think they only use (high-quality) japanese caps.
