Newest Mac Minis, what is upgradable?

Really the only thing you can change is RAM/Hard Drive on almost any Mac aside from Mac Pro.

The new Air is the other exception to only being able to change the Hard Drive. (Ram is on-board)
 
Remove the Superdrive for a second 2.5" drive?

I think they're great as a HTPC, secondary - fileserver, VPN, Apple TV stuff; MP3s, Photos, etc.
