I've finally saved enough money to start buying my dream gaming rig, but I have never built a computer before from scratch. So I'm gonna need some direction assembling it, can any of you help?

Spec.
Intel i7 975 (water cooled)
2*Geforce GTX 295 (water cooled)
Zalman Resorator 1 V2 (Possibly 2 of them)
Single rail PSU (not modular)
6/12Gb DDR3 (low timings over speed) [Memory paging will be disabled]
2*WD caviar black 500Gb raid 0
ASRock X58 Extreme
Suitable case for w/cooling i.e. few grills to reduce dust (any ideas?)
Windows Home Premium 7 64-bit

All suggestions are welcomed, but note I am limited to what is obtainable in the UK.

Ps Merry Christmas

It seems like you have no budget concerns (btw, consider one of the new 5xxx series from ATI. It'll save you from having to upgrade to DX11 in the future, and it's cheaper. But that's just my 2 cents). One of my buddies has his external WC setup with an Antec P183, and he loves it. ATCS 840 is another case people around here love :). Another guy I know has a NZXT Whisper. Says he loves it, but I don't know anybody else with one. (Perhaps someone can back that).

After some searching I think I'll go with the P183. The spec is nice and I can pick one up for under £100. The front is a little ugly tho, but I'm sure it will grow on me.
Looks like the idea of w/cooling 2 GPU's and the CPU is off the table. I'll only be able to use one reserator without case modding, and I don't think one will handle all 3. Especially if I OC the CPU.

Only 5 days to go till I can start emptying my savings account.

Parts are comming in. Let the flood of questions begin.

My motherboard has a slot for a "ATX 12V Power Connector" (8 pin)
My power supply (OCZ Z850) has 2 "12V CPU Connector" (8 pin, 4+4 pin)

These are to be joined yes? NB my motherboard has no "12V CPU Power" slots.

Skip on the RAID0, no performance benefit for lots of risk and added complexity. You would be better off getting 1TB or 2TB drives if speed is a concern.
