New to Servers

I recently purchased a collection of hardware for a server and I just got the pieces and found I had ordered a dual chip motherboard and I only ordered 1 chip.

The board is a Foxconn (if that helps). I was wondering if I should go ahead with the plans and use this board or if I should send it back a for a single chip motherboard.

Well there are several things you could do. I recommend using the motherboard, getting another chip as well. Some dual chip boards allow you to only use one chip if needed. What exactly are you going to be using the server for anyhow?
 
I have a Foxconn motherboard that I use as a server at work. As a matter of fact, a couple of them. We had only originally planned one CPU per motherboard(until funds allowed more later), and it works out just fine. If we need to add another CPU later we'll have the ability to do so without having to purchase an entire new set of mobo's. So stick with that one if you can.

And it's good to let us know what you'll be doing as a better decision can be made as to what you should do.
