This guy posted almost the same questions a few minutes before you, so check it out, it should help:
http://forums.anandtech.com/messageview.cfm?catid=28&threadid=1382948&enterthread=y

Short version is:

SKT 754 = No Dual Channel
SKT 939 = Yes Dual Channel
SKT 940 = Yes Dual Channel, but also Registered ECC memory.

Don't know first hand what memory can be used, or what was tested, so you'll need some additional views on that. From what I remember, any standard PC 3200 RAM would be OK, but you may not want to get some of the super fast stuff because that sometimes doesn't work as well. Check out this review of RAM for more info (I'm linking to the A64 test page, but you can read the entire review for more info):

Forget socket 940.

939 = faster, more money, better chance of upgrade in the future.
754 = cheaper, slightly slower, and may be relegated to "budget" chips for an upgrade in a year.

And get a m/b thats based on the SIS755 or NF3-250/Gb chipset. Or if you really must must go with VIA then get the k8t800PRO chipsets.
