New Small Business Network

My company is gearing up for a move into brand new office and along with the headaches it will give us the ability to revamp the network setup.

I currently have:
FiOS Business 35/35
Watchguard XTM 22-W: Router, VPN, UTM Device
Netgear FS728TS: 10/100 switch
15 Workstations
3 Laptops
2 Servers

Want to upgrade to Gigabit and looking for any advise/help available. I am going to keep the Watchguard because we just purchased this about a year ago and love it. I don't think I need to get a full blown managed switch but was looking at smart switches. I need a total of 29 ports (24 drops and 5 for servers and phones) so I'm in the void of getting multiple switches or a single 48 port switch. The catch is with watchguard I either have to chain multiple switches (use single port on watchguard) or use a vlan and run switches on their own port on watchguard.

Ideas:
Fanless switches are a must
TrendNet, ZyXel, D-Link (most cost based to sell project to the boss)
2 x 16 port
1 x 24 port and 1 x 16 port
1 x 48 port
Cat6 wiring throughout: in-wall, patch panel to switch and jack to pc (OVERKILL?)
48 port patch panel
wall mounted rack

Perhaps a 48 port switch, and use Cat 6 with multiple drops per room. With the 48 port switch, you would have some scalability, so can add more workstations, servers, even other nodes such as cameras.
