New m/b and RAM

Hello again people

I am planning to upgrade from my P4S533 with original Samsung PC2700 RAM. I will retain my lovely P4 1.6A, but I am a bit stumped about which m/b and memory to get !

I was THINKING of the P4C800 (too expensive ) or P4G8X (still not sure if I should bother), or shall I get another P4PE ? Or how about Gigabyte SINXP1394 or the 8INXP ?

And memory wise, is the Corsair XMS the best ? Or shall I get another Samsung original PC3200 or OCZ or something else ?

Also, I have been wondering whether I should order 2 x 256 or just get 1 x 512 ? Also, should I get the standard LL or the LLPT (with Platinum heatspreads) if I go for the Corsair ?
 
Forgot to mention, I am a bit unclear about the Granite Bay and Canterwood chipsets !

I understand the former is a bit older, and the Canterwood is more forward compatible, but apart from that I'm a bit lost...

All help/suggestions welcome.
