Setting up an iPad 2 it gave an option to create a new Apple ID, with a default of @me.com, not apple.com. Is it worth changing that? From what I can tell www.me.com is kind of a dying pre iCloud type service (?).

My Apple ID is my g-mail address. I really don't think @me.com is dying at all, as it allows for you to establish your own account away from your iTunes account, which is typically associated with your Apple ID. For example, a husband and wife would share the same iTunes account (Apple ID), but have their own @me.com accounts for iMessage.

iCloud still uses @me.com for its free email, including for brand new accounts.

It isn't dying...but why use it? I have my own personal exchange accounts, so I see no need for it, gmail offers push email already, and so does my exchange server. :)

Apple has never given out apple.com email addresses to anyone but Apple employees.

This. Same with google and Microsoft. If you have an account with that email address, it looks like you are representing that company.
