You'd might as well stick to a real G5 setup if you want performance, all of the PowerMacs are dual G5s and would actually offer substantial performance for any Apple specific computing needs, ie your graphics design. Otherwise iMacs are dumbed down to the extreme in order to appeal to users who want as little complication and fuss as possible with the "all in one" design (not including keyboard and mouse obviously)

All these things said, it's pretty clear upfront that tinkerers and high performance buffs will not like the iMac. And unless you get a great deal from your College, the PowerMac G5's are too expensive to be an easy alternative to recommend.
