For gaming or OCing I think a Fortran 450W PSU would be better than the Antec (esp since the Antec is a SmartPower and not a TruePowerII)

Pro just has features you probably don't need. Go with Home, especially with Vista is on the horizon.

Looks good. The power supply in the sonata II does just fine for overclocking my X2 and 7800GT. The 7800GT is plenty for a 17" or 19" LCD since they run at 1280x1024 native resolution. That samsung monitor is fine, 8ms is plenty good enough, I don't have any problems even with my 16ms LCD's.

I have that Epox board and it's nice. Good mobo for the price. I have a 7800GT running a 19" LCD at 1280x1024 and I set everything on high so I think the GTX is a waste of money at this res. The GT handles it just fine. Plus the 7900 should be out sometime soon so you might not want to blow a wad on the GTX when you can get the GT now, and if you need somethingn faster later trade it up for a 7900 then.

is the PSU in that antec case good enough for the graphics card ? the minimum for a 7800 gt is 450 watts ?
