I haven't decided on the OS just yet. I know I want 64-bit, but should I go ahead and purchase Vista Ultimate 64-bit or just use Win7 RC1 (are there enough drivers for Win7 yet?)? I am a gamer but mainly I am a HD video editing guru with Sony Vegas Pro 8.0c.

Anything you would change/add? Should I go with a faster HD or get another 1TB drive and raid it (for perfomance in Sony Vegas Pro 8.0c)

Win7 >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>> Vista.

PS. Its hard to help when you are so redundant. Just list what youre looking to buy so we dont have to go through your list like some sort of Mahjong Titans game :p

There's nothing wrong with your current power supply. Save yourself 90 bucks.

Looks awesome but I'd get one 24" monitor instead, Dell's LED model was $188 the other day. I just built a very similar system.
