Question New build looking for some advice with parts

Hi All,
I build my systems every 7 - 10 years. Yes I am still using Win 7 on a AMD Phenom II 980 with 16GB ram and AMD Radeon HD 6900 . No, I have no problems with 7 other that PC can't play new games I want. I build with AMD. I am not interested in waiting on the new platform, price. Don't think I'll overclock, did it to the first one I built but haven't since.
I do the usual home things- FF browser, a little doc creation and photo editing, utub watching, light things. At this time my game interests are NoMansSky Skyrim Minecraft and want to do some streaming - particularly DayZ.
Bought the AMD Ryzen 5800x on sale and have looked over my options for the rest. Could use some advice on choices because I haven't kept up the the terminology.

MB - MSI MPG B550 Gaming Plus ATX AM4. Picked it because of good reviews. Don't need the wifi one. Know it will need a bios update. https://www.amazon.com/MSI-MPG-B550...tronics&sprefix=MSI+MPG,electronics,87&sr=1-2

SSD - All have good reviews and about the same price just wondering if one is better for MB and gaming. Have several SATA's I'd reuse as copies and backups, 1TB, 312GB.

MEMORY -
Lost here, terminology and comparability. Like the 32GB for long term and streaming. PC building guides say no problem for several that I looked at but can't find some of them listed on the MSI MB parts list.

Graphics Cards - Radeon. Helped me to jump in and do this was the mining crash/price drop. Thoughts here are a good card for the price now and I could upgrade in a few years if needed. Reading so so things on the **50xt's not worth the price for performance. Is it true that the 2 fans run hotter then the 3 fans? Thinking 6700 but not ruling out 6800, just seeing the 200+ price jump.

PSU - Don't know yet what I'll need until GC is decided. Currently have a Corsair HX650W modular, would reuse or buy new modular one if needed.

Case - Keep reusing a quiet case I bought many years ago. If new GC doesn't fit I'll buy another. Solid sides so don't care about RGB, actually keep reusing two blue tubes towards the front to create a little glow. Will reuse or replace the Noctua fans.

Monitor - Probably will need to upgrade. I have a ViewSonic XG 24" now and if I don't like the performance I will buy a better one in a few months.

I like the price range that I'm in and will save when I can, reusing case and whatever, but things like the Radeon I'm really not sure the price jump for a 6800 is worth it. Oh, updating to WIN 10. lol

First thing to do is put everything into PCPartPicker.com and you'll get prices and compatibility hints. Sharing the link allows for people to tweak things as needed and send the new link back. Since you mention a couple of options for GPU make the first build copy the link and then tweak it and copy the second link.
