Need to setup small server to serve 2 person business - will WHS2011 work?

I have a client that needs to have a small server to run Quickbooks and maybe outlook. They are strapped for cash so they only have one license for Outlook and Quickbooks which is OK because only one person at a time will need to use it.

In the office they have 2 client machines on which they will do their web browsing and other office work. The server will not be used for browsing in hopes to keep it more secure.

I was going to go with a Windows 7 Pro install and have them connect in via RDP when they need to use Quickbooks or Outlook. If they use this option they will only be able to connect one person at a time, which is fine.

I was also looking at Windows Home Server 2011 because of it's inexpensive price. I've never used it before so I am coming here for feedback.

So, knowing what I stated, what OS would you go with?
The server hardware is a Dell Poweredge 1950 with dual 3Ghz processors with 4GB of RAM, if this matters.

I also have a Vista Business 64 bit license that is unused which I could put in place instead of Win 7 Pro, This would be about $50 less expensive and I don't think the client would mind at all if I used this. Is this a decent option?
