anybody know any particular models that I should look at? I'm looking for something with built-in video, and would prefer an micro-ATX board, but ATX will work too.

Linux does not require too much. Just about anything will do. Will it be your primary?

Nope. Just a file server. But it will be located offsite once it's up and running - in my parent's basement, rather than in my own apartment.

I know linux doesn't require a lot; I'm just trying to find out what to look for - what is supported, what isn't, what boards people have tried and gotten to work without having to jump through a bunch of hoops :p

I built a very nice machine with the Biostar 7025 north bridge:

I liked the way the BIOS sync'd up the PCs cooling fans, and then ran cool & quiet on all of them....very cool. If you are running it in a cool basement, it will turn the fans slowly, therefore little dust, etc, but, speed them up if temp goes up.

Gets decent linux marks in user reviews.

User reviews say this MSI board works great with Linux:
