Need Recipe Ideas For Eye of Round Roast

I got myself some bulk beef: a 7 pound Eye of Round roast.

I need some recipe ideas for this cut of meat. I know its very lean and needs to be cooked rare to medium.

I am just not sure about any details on what's best for seasoning it and method of cooking.

Any help would be appreciated.

We eat those all the time, although smaller cuts. Its a good, economical roast to feed a family, and can be very good. We basically just rub it with salt, pepper, maybe some rosemary. Place into 500 degree oven for 15 minutes then reduce to 325 until the middle is 165F or so. Tasty.

I have an eye of round roast in the freezer too, and have been trying to figure out what to do with it. This might be the best suggestion.

I decided to try to do both methods.

I cut that roast in half and cubed one half and ran it through my meat grinder. The other half is in the fridge to roast Good Friday.

The burgers turned out quite nice. They were fairly lean and quite tasty, but not as tasty as ground sirloin. Still, I enjoyed them.

There are lots of meat rub recipes. I'd probably just use salt & pepper, myself. Maybe a little worcestershire sauce.

If you take it out at 165, it's going to be well done. If you want medium rare, you should pull it around 130-135 and let it rest for 10 minutes or so.

As a quick reference, here are the standard temperature/doneness levels for roasts:

120°F to 125°F, (49°C to 52°C) = Rare
130°F to 140°F (55°C to 60°C) = Medium Rare
145°F to 150°F (63°C to 66°C) = Medium

Put in a broiler pan, add onion, salt, pepper, garlic, paprika, and enough chopped bacon to make up for your mistake of choosing lean meat. Add a quarter inch of water, cover tightly, and bake at 350 for five hours. Uncover and bake for another thirty minutes. The meat should carve with a fork.

Place on a toasted, buttered roll and add a slice of extra sharp cheddar.

I rotisserie my eye rounds. Seasoned with salt pepper and rosemary. So yummy.

Put a few lbs in a crock pot with a little garlic, basil, an onion, and some pepperoncini peppers. Cook it on low for 6-8 hours. Shred it with a fork. Makes some killer Italian beef sandwiches....
