Need MAJOR help deciding on custom build components

I need some help figuring out what I should buy for the computer I am hoping to custom build soon
I'm not that experienced with the hardware-aspects of a computer, but am willing to learn (so I need your help)
I barely know if these components will even go together, but I had something along these lines picked out:
Case: COOLER MASTER Centurion 5 CAC-T05-UW Black Aluminum Bezel, SECC Chassis ATX Mid Tower Computer Case
DVD/CD Drive: ASUS Black IDE DVD Burner 2X DVD-RAM
Internal Harddrive: Western Digital Raptor WD360GD 36.7GB 10,000 RPM
Memory(1gb): CORSAIR ValueSelect 1GB 184-Pin DDR SDRAM DDR 400 (PC 3200) Unbuffered
Memory(another 1gb, more expensive): CORSAIR XMS 1GB 184-Pin DDR SDRAM Unbuffered DDR 400 (PC 3200)
Mouse: Logitech MX518
Keyboard: Can't find a nice one, lol
Power Supply: ASPIRE 600W Power Supply
Sound Card: Creative Sound Blaster Audigy2 ZS (7.1) Channels PCI Interface Sound Card
Graphics Card: Albatron Geforce 7800GT 256MB
Processor: AMD Athlon 64 FX55 San Diego (skt 939)
Motherboard: MSI K8N SLI-F ATX AMD
The total for this system is a little under $1700 (the high-end of my budget) (without rebates)

I made another board on the CPU/Processor board and they recommended I get a dual-core processor
So I re-configured and (briefly lol) it looked like this:
Case: COOLER MASTER Centurion Case (same as before)
Internal Harddrive: WD Raptor 74GB 10kRPM (twice as much memory as original.. mem. isn't too important for me)
Processor: Athlon64x2 3800+ (slower processor, under half the price - dual core)
Power Supply: Aspire 600w PSU (same as before)
Motherboard: ABIT K8N Ultra ATX AMD (very similar to the first, I think)
GRAPHICS CARD: BFGTech Geforce 7800GTX 512MB! (uber graphics card to subsitute for the slower processor)
2x Memory(1gb): Corsair 1gb 184-pin, unbuffered, ddr400(pc3200) (2gb total (2x1) corsair)
DVD/CDdrive: (same as before)
mouse: LogitechMX518 (same as before)
soundcard: need recommendations, please (is the one from before good? no overkill please)

The total for this configuration is only a little under the first system...
differences:
the 2nd is dual core, but ~600mhz slower (?)
the 2nd has an uber ownage graphics card (lol).. its GTX and 512mb, rather than GT and 256mb
the 2nd has a better harddrive (well more memory)
the 2nd has a different PSU (dunno if better/worse)
the 2nd's memory is the same amount (2gb) but of lower quality I think

NOTE: the configurations I listed are just possible set-ups.
I'm trying to get the most for my money (budget up to $1600-1700) and I want it to have some long-term 'stuff' for me, as I intend to have this computer for a while!
So, basically my question is: "Can you comment on the setups I have thought of (as in make suggestions - change things or point out something I'm missing) or could you suggest me a whole new setup that would fit in my budget and suit my gaming and general use needs (I'm guessing around 60-65% gaming on the computer, the rest just internet and stuff like that) i'd so greatly appreciate it

soo...which one is it?

and did you plan on overclocking or anything?

and i'd shy away from the 36 gb raptor and just stay with the 74...better bang for buck.
