Any reason for a pole/mast if we can find somewhere on each house within line of sight?

Nope, don't have to use a mast. But the Nanobeams don't come with a wall mount. You will have to purchase that separately.

Also: forgive my ignorance. What's a switch?

Hmm... You may find this entire endeavour challenging if you don't know basic networking concepts. I'm not being condescending. I just want you to be aware that you need basic skills here or you will be lost from the moment you begin. Perhaps there is someone you can hire to do this job?

Oh I know for a fact that I'm in over my head with this. There was never any doubt about that. I've watched the youtube setup, however, and it doesn't seem overly complicated. If I can't figure it out, we'll bring someone in. Want to avoid that cost though, if at all possible.

One further question regarding the switch up at the cottage. How does that solve the wifi issue up there? Wouldn't we need some sort of router make the network wireless up there as well?
 
You need an AP at the cottage. You can use an existing wireless router if you have one to do this or purchase an AP specifically for this job: https://www.ubnt.com/unifi/unifi-ap-ac-lite/

If you use an existing wireless router, you would plug a patch cord coming from your Nanobeam at the cottage into a LAN port on the cottage wireless router. You want to leave the WAN port unplugged. This is basically turning your router into a switch by leaving the WAN port unplugged.
