Need help understanding wire...

Plenum means that the cable can be lay thru the attic, or false ceiling (like in the offices were you have the lights), and will be no affetced by EMI and such.

you got it half right...

Plenum is the raised floors/ceilings/airducts. Plenum grade cable produces less smoke then a riser grade cable. It has nothing to do with EMI, EMI is blocked by twisting the wire in pairs, hence twisted pair
