need help identifying an italian end of harvest season recipe

The guy calls it "jah-jah"

but it is essentially
chunk green tomatoes
chunk banana peppers (seeds and all)
chunk jalapeno peppers
crushed green olives
crushed garlic
black pepper & oregeno

let it "cook" in a bucket in your baseement for 2-3 months (like kraut) in a 5 gallon covered crock.

Then when its done you add olive oil and seal it in jars, and you have a tasty vegetable treat.

Can anyone identify the real name of this recipe?

Sounds like a fermented vegetable relish similar to Kimchi or sauerkaut. No idea what an italian version would be called...

its more like an aged relish I would think...

It's probably a type of sotaceti or sotolli but you need to get a more specific recipe from the guy to know for sure. What do you mean by "let it cook?" Is it marinading in an acidic base like vinegar?
