Need help creating a Software Training Video

I am trying to create training video on a piece of software and for the life of me can't figure out a way to do it.

What I would like to do is tape the screen and my mouse movements as I talk to the students. I have a digital video camera, VCR, regular camcorder and a video card with S-Video on it. Any ideas or suggestions?
