Question Need built help for new work PC

I have a task to build new PCs for work primarily for video and graphic editing like movies and apps using Quadro set up. They must be blazingly fast (good I/O) and reliable. I must confess I have sort out outdated knowledge and with all the new tech coming out these days I think I need serious help. I read and read, but have very little hands-on experience with these new tech like M.2 SSD etc etc. Most PCs at work is set up either at RAID 1 or RAID 5 with adaptec raid controller for SAS SSD. They are OK in speed, but quite reliable.

My question is, could you recommend me a very fast SSD built, but without sacrificing reliability (I mean some sort of back up mechanism in case any of SSD fail)? I'm uneasy using M.2 SSD with motherboard's controller because of the fear of losing data and I head they generate quite a lot of heat. Also, I don't know if there is any advantage in using raid controller with these days' SSD that is simply very fast. I read about PCIe controller for PCIe SSD, but not sure how to set this up.
