Having some friends over to eat tonight and dinner is mostly prepared. Nothing too fancy. I made a lasagna for entree with garlic bread and a big salad. While the stuff bakes, we'll be hanging out so I'm thinking of something to grab at the store on the way home. One of our friends coming over does not eat red meat/pork but does eat chicken. Any recommendations for something quick and easy to snack on as we wait for dinner and have some drinks? Something preferably that can be picked up in the frozen section of a grocery store would be ideal... Thanks.

Do you have a Trader Joe's nearby? They have lots of things you could use -- mini tacos, mac & cheese bites, lots of fancy cheeses & crackers.

TGI Fridays makes lots of different appetizer-y type things. Wings, potato skins, mozzarella sticks, etc. Should be in the frozen section of almost any grocery store.

Pinwheels looks nice and they're easy to make. Get some flour tortillas, and make a filling consisting of:

2 packages of frozen chopped spinach (10-12oz) - Be sure to thaw, rinse, and dry it well.
1 box cream cheese (leave out to soften)
1/2 cup mayo
1/2 cup sour cream
1 pack of dry ranch dressing mix
Handfull of bacon bits (to taste)
4 chopped green onions

Mix the ingredients together and put them in the fridge for an hour or two. Then spread the mixture on to the tortillas and roll them tightly. Then slice the rolls into "wheels".

Feel free to add things you like. Artichokes, chicken, ham, crab meat, and prosciutto work pretty well. They should look something like this:

Made this not too long ago and it was a huge hit. If you decide to make it, do your wallet a favor and substitute the fontina for mozarella.

To go with your dinner theme I recommend:

Sliced mozzarella and tomatoes with olive oil and basil.

no cooking required; just slice, stack, season.
This (MMmmmm) or the American version of Bruschetta. Both would complement the dinner quite nicely.

Mini-tacos, then lasagna? How barbaric! :p edit: damnit! I'm getting hungry. A student took my lunch money (last week I promised to purchase a raffle ticket to win a rifle; she has some sort of hunting club dinner tonight & came to collect.)

Can use cherry tomatoes and baby bocconcinis; slide them on skewers with fresh basil interspersed, then drizzled olive oil and balsamic, some s&p ground over it. This save the cutting and need for forks and knives. Easy peasy lemon squeezy.

Good call on the mozz tomato and basil. Why didn't I think of that?? Easy to make and tasty. And something I can easily pick up on the way home from work. Thanks!
