Need a Recipe idea

My wife is gone for the day, and figured I'd make her supper, but I am quite out of ideas. I was thinking maybe some sort of pork chops, or chiken, rice, veggies and something for desert. What are your suggestions?
 
Chicken Parmigiana

Ingredients:
2 skinless, boneless chicken breast halves
2 oz. dried bread crumbs
1 egg, beaten
3/4 (16oz.) jar spaghetti sauce
2 oz. shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Directions:
Preheat oven to 350 degrees. Dip chicken into egg beaters, then the bread crumbs. Place chicken on a lightly greased cookie sheet and bake for 40 minutes. Pour 1/2 of the spaghetti sauce into a 9x13 baking dish. Add the chicken and pour on the remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and bake in the oven for 20 minutes.


Chicken Cacciatore

Ingredients:
1 pound skinless, boneless chicken breasts
1/2 cup chopped onion
1 medium green pepper cut into strips
1 16oz. can of whole tomatoes
1 6oz. can of tomato sauce
1/2 teaspoon oregano
1/2 teaspoon basil
1 cup minute rice
Cooking spray

Directions:
In a large saucepan, sauté the chicken, onion, and pepper with cooking spray. Stir in tomatoes, sauce and seasonings. Bring to a boil. Stir in rice and cover. Reduce heat to low and simmer for 10 minutes.

You could make some pasta salad to go with it, if she likes that kind of stuff.

Pasta Salad

1 (16 oz pkg.) tri colored pasta 1 cup Italian style salad dressing
1 cup creamy Caesar style salad dressing 1/3 cup pitted black olives
1 cup grated parmesan cheese

1. In a large pot of salted boiling water, cook pasta until tender, rinse under cold water and drain
2. In a large bowl, combine the pasta, Italian salad dressing, black olives, and Caesar salad dressing. Mix well.
Add grated parmesan cheese

Oops! Just noticed that the other recipe wasn't complete, plus it made too much dessert. I doubt you need 60 bon bons. 😀

the chicken is good, i make chicken parmesan often enough

bread and pan fry instead of bake (or rather, season, flour, egg, bread) and make my own marinara sauce

hope you get some good breadsticks with that, some proscuitto (or other cured ham) wrapped around them is good 🙂
 
she doesn't do pasta salads too well, or starch in general. It seems that whenever she has such her stomach gets really sore. Probably a mild form of IBS or something.
 
Baked Spaghetti

12oz spaghetti, cooked
2 cans cream of muchroom soup
black olives (optional)
2 cans stewed or diced tomatoes
cheddar cheese to taste
1# ground beef or turkey browned

1. Put spahettis in 9x12 glass dish
2. Mix in tomatoes and beef
3. Layer cheese over top
4. Pour diluted mix of 40%water/60% mushroom soup over top
5. bake at 400* for about 35 minutes
6. Tope with additional cheese if desired

Make sure the soup mix gets distibuted throughout well otherwise the pasta may get crunchy.
