Who knows how to cook pork chops so that they are moist and tender? Everytime I do it, they are dry and tough. Any cooking tips...

My mom has a kick-ass recipe, I can get it tonight... It's basically sweet & sour boneless pork, cooked completely submerged in sauce. They are so good it's scary.

A lot of folks over cook pork for fear of diseases that were eliminated in commerical pork decades ago. Although you shouldn't necessarily eat raw pork, you don't have burn it to a crisp. (Note: The foregoing does not apply to any UK meat products. ;))

On a related note (ok only tangentially), one of my favorite Simpson's quotes involves pork. From "Lisa the Vegitarian" episode:

Homer: Wait a minute wait a minute wait a minute. Lisa honey, are you
saying you're *never* going to eat any animal again? What about
bacon?
Lisa: No.
Homer: Ham?
Lisa: No.
Homer: Pork chops?
Lisa: Dad! Those all come from the same animal!
Homer: [Chuckles] Yeah, right Lisa. A wonderful, magical animal.
