These pictures will not be blown up, so high megapixel sensor will not be needed. I don't know much about f stops. I assume the higher the number the slower the shutter speeds therefore the less need for more light? Is the t3i overkill?
There seems to be varying opinion about the 100mm lens. Some are recommending 150mm or 180mm, while others have recommended <100mm. Is there a definitive answer?
I would go with a lower focal length.
1. It's cheaper
2. It's easier to aim something when it's not all zoomed in
3. Lower focal length means there will be more depth of focus, which seems important for your purpose.
If you answer my above post, I can give you a better answer in what focal length to get. Basically if you don't need as closeup, 50mm will probably be ideal. If you need really close up, then a longer focal length will be more ideal as more zoom means you don't need to lens as close to what you're photographing so that the lens won't be blocking the light from the flash.
But 90-100mm should be the max that you'd ever need. T3i is overkill. Just get the cheapest DSLR you can find. If you can get refurb/used, even better. You may be able to get this whole thing set up for under $500.
