How many veggies are there? I was listening to Dr. Dean Edel, and he commented that Americans eat a typical 10 vegetables in their diet, where as countries like France consume a much broader range of vegetables, which may contribute to their better health since they get amore completerange of antioxidants, vitamin variants, and phytonutrients/bioflavanoids.

Reply with 1 veggie you know of, make sure you don't repeat. I will start.

swiss chard - what does it taste like? How do you prepare it?
chinese cabbage - I tried this before. It's actually very good, has a sweety/spicy kick.
 
Nappa Lettuce.

Imagine my surprise when I was working as a cashier at Grand Union to find that Nappa was really a vegetable. <<-- Dragonball Z reference.

it's kinda like spinach. you can eat it raw in a salad or cook it up like spinach.
