Anything by Apocaliptica. They are a quartet, I think, of classicaly trained string instrument players that do heavy metal covers. Most of the ones you will find on napster are Metallica covers but every now and again you can catch something else. Alright probably not what you meant :p.

All the ones mentioned previously. :)

Beethoven's Sonata Pathétique.
Vivaldi's Gloria (if you like choral music).
Mozart's Turkish Rondo (aka Turkish March or Rondo alla Turca).
Bach's Air on the G String, and Prelude in C, bwv 846, from the Well-Tempered Clavier.

Also, Leo Kottke's guitar rendition of Bach's "Jesu, Joy of Man's Desiring" is absolutely gorgeous.
You can also find classical guitar versions of Greensleeves, Moonlight Sonata and others.

Not really a classical song, but a nice instrumental, is "Ashokan Farewell" from Ken Burns' Civil War soundtrack.

BTW, nice sig for a guy asking about classical music. :)

F. Chopin: Barcarolle in F# major, Op. 60
Polonaise-Fantaisie in A-flat, Op. 61
Ballade in F minor, Op. 52
Nocturnes, all of them

Also F. Liszt, Etude de Concert no. 3, 'Un Sospiro'

These always help me to unwind.

Rachmaninoff Piano Concerto No.3 - Performed by Martha Argerich
Rachmaninoff Piano Concerto No.3 - Performed by Earl Wild
Rachmaninoff Piano Concerto No.3 - Performed by Jean Thibaudet
AVOID RACH3 - David Helfgott (from Shine)

Rachmaninoff Piano Concerto No.2 - Performed by Vladimir Ashkenazy
Rachmaninoff Piano Concerto No.2 - Performed by Sviatoslav Richter

Beethoven Piano Concerto No. 5 - Performed by Claudio Arrau

Beethoven Violin Concerto - Performed by Jascha Heifetz or I. Perlman

Brahms Piano Concerto No. 2 - Performed by Vladimir Ashkenazy or Emil Gilels

Brahms Violin Concerto - Performed by Jascha Heifetz or Anne-Sophie Mutter

Mendelssohn Violin Concerto - There are too many good recordings of this pieces

Sibelius Violin Concerto - Performed by Heifetz, Mutter, or Shaham.

Tchaikovsky Piano Concerto No. 1 - Too many good recordings to list.. Van Cliburn and Martha Argerich are two of the best here.

Dvorak Cello Concerto - Performed by Mtislav Rostropovitch or Yo-Yo Ma

Elgar Cello Concerto - Performed by Jackie Du Pre or Yo-Yo Ma

Chopin (Kissin, Argerich, Pollini, Horowitz, Zimmerman, and just about every virtuoso pianist have recorded Chopin)
Pollini is my favorite Chopin player.
