what's so great about 64 bit stuff? Can you still use all the same hardware from a [previous] 32 bit system with the exception of the board and chip? What about the software...is it 64 bit apps only? Is this ideal for a home workstation or server needs only?

32 until a must-have app or game comes out in 64-bit only. I won't upgrade just for bragging rights.

I may be putting together a dedicated Digital Audio Workstation in the near future, and that will probbably be 64 bit as well as dual processor, in anticipation of Cubase SX 64-bit.
