Nahelem replacing single core Xeons

I've got plans to virtualize six servers and possibly nine total that are all 2.8ghz single core Xeons with Hyperthreading. CPU usage maxes out at 60% on two of them but most coast along at 20% usage.

An e5520 @ 2.2ghz or W3520 @ 2.6ghz should easily cover that and more?

I'm looking to build a test bed to test this on and debating on picking up a dual socket 1366 board or if a single socket is more than enough.

dual socket boards aren't that much more expensive. i think i would do that with one CPU for right now and add another later.
