do you guys have any nacho cheese recipes or know of a really good commercial brand?

i want nacho cheese with a little spice to it but not too much. i like Taco Bell's nacho cheese so something like that would be good.

Wal-Mart around here carries that yellow stuff in a can. In the mexican food section, it is in a can with a red label. Nothing better than Velveeta and Rotel though :) YUM!

i'm used to buying cheap little cans of it from Utz or using cheesewiz and its just plain tasting or doesn't really taste very good. i'd rather spend a few more bucks and get somethign really good or make my own.

does velveeta or rotel make actual nacho cheese? if not, what do you add to give it some spice?

It makes a version of nacho cheese. Buy the Extra Hot Rotel but be sure to buy more toilet paper while you are there.

:) Yes, the rotel comes in different levels, Mild to Extra Hot. Just buy a big block of Velveeta cheese and a can of Rotel, cut the Velveeta into cubes and pour the Rotel over it and cook it on low, best to do it in a crock-pot but any ole pan will do, just make sure it is on low so it will not burn and stir it once in a while.

wait, whats Rotel? is that the stuff to make it spicy then? i was assuming Rotel was a brand of cheese, like Velveeta.

rotel is canned tomatoes and green chiles. you add in a can (or 3) to your cheese.



arriba! brand is pretty good if you want pre-made stuff. comes in several heat levels. made in houston where people know what tex mex should taste like (After all, tex mex is native to houston)

* 1 cup finely shredded Monterey Jack, asadero or Chihuahua cheese
* 4 ounces green chiles
* 1/4 cup half-and-half cream
* 2 tablespoons finely chopped onions
* 2 teaspoons ground cumin
* 1/2 teaspoon salt
* 1 serrano pepper, chopped fine
* 1 tablespoon finely chopped cilantro

the half and half keeps the cheese from separating?

Rotel is a can of diced tomatoes, chilies, and other spices.

Rotel

The Mexican Festival brand looks good; tomatoes, lime juice and cliantro.

add cayenne powder or the juice from some chipotle peppers into some melted velveeta, then.

my crock pot recipe for a party is very simple, but still good.

Large brick of velveeta,
brown one package of ground beef
medium salsa.

change the porportions as you see fit. sometimes i add small brick of the spicy velveeta as well, I usually get a large container of chunkyish and cheap salsa and use about half, this thin it out.

oh have to try that one.


for a snack i do the velveeta and salsa. i even baught some great microwave bowls with a handle that is perfect serving for one person.

to bad chips go stale so fast/.

The Tostitos brand Queso dip is pretty good and has a bit of spice. It's in a jar with the salsas where the chips are. Just heat it up and there you go! I have only seen it in a "medium" spice level so it might be just what you are looking for.

you guys use kraft velveeta? thats the only velveta i saw at the store. so i got that and i couldn't find any of that Rotel stuff so i just got some salsa seasoning and added that to the melted velveeta. it tastes awful, like plastic. i guess i'll stick to the pre-made jars of salsa con queso or just the cheesewiz. at least that is 10x better than this velveeta crap.

Rotel should be either on the canned veggies or the mexican food isle, depending on where you live.
Just adding salsa seasoning sounds like it would be disgusting.
Trust me, find the rotel and try again.
