i find the temps to be very accurate 
at most 3-5c off
it fluctuates and is read realtime
and i have compared the voltage readings to various readings taken off the board itself
the winbond hardware doctor compares the same as the bios also
all programs read the same temps for me so far too
i think it was epox or gigabyte boards or something that had that issue...
or maybe is was an mbm5 issue with support or simply a bios problem on a few motherboards
but overall i am gonna live
