My new favorite kitchen gadget - the food mill

Reminds me of the one my grandma had. I had about 6 pounds of home grown paste tomatoes and dammit I wanted the finest tomato sauce I've ever eaten. A lot of recipes called for a quick simple sauce and then run it through a food mill. A food processor isn't going to do it as it will just pulverize/liquidize it IMHO.

OMG! Best consistency ever and from what I hear you can make some of the best mashed potatoes ever with one.

Anybody use a food mill? I feel so old fashioned.

never used one, and as much as i love to cook, i may put it on my wishlist, but not near the top of it.

but then, i enjoy chunky tomato sauce and a masher makes me happy for mashed potatoes so *Shrug*

my favorite is still a microplane grater

Mine is still the food processor or mandolin so I guess the food mill in purpose sits somewhere in between. There's three mill sizes - coarse, medium and fine. Apparently you don't have to worry about seeds/cores as this separates them. I can really see it's potential for soups.

Definitely wishlisting that for Christmas. Thanks for the heads up!

That's my requirement for a kitchen gadget. When you run into a situation of "I really wish I had a <gadget>" 3-5 times it's time to just get it.

I just hope Alton approves. I can imagine some really incredible soups using this. The texture it provides is awesome.

Think wild mushroom soup with veal stock/hock that's been cooking and reducing all day and then run it through the food mill to serve.

Yes, I use one several times a year. It's awesome for separating the seeds from the tomatoes. I also used it last fall on about 8 bushels of apples. Made a lot of apple sauce. 🙂

🙁 Bad apple year here this year though. I might head to the local farm auction Wednesday & pick up a couple bushels of tomatoes. Should be low in price right around now - $5 to $10 a bushel. Maybe some fresh picked sweet corn too; $6 a bushel. If I get the tomatoes, I'll par boil them, take the skins off, squeeze out most of the seeds, then run them through the food mill. A day or two to cook them down.

You don't actually think Alton typed that, do you?

Yeah, food mills are nice. I definately want one, but getting a mandolin is a higher priority than a food mill for me. 🙂

I guess I just look at that as another gadget that I will use once or twice and not have room for in the first place. I f I really need to separate like a food mill, I can just use a strainer and push the material through. Doing that separates seeds just as well, a little slower, but works fine. The mandolin on the other hand was a well received purchase! If you have a mandolin, just watch out. As careful as I have been, I have lost some blood using this device!
