The most frequently recommended DVD burner these days is the NEC 3500/3520, so check that out as an alternative to what you have listed.
If you don't mind some really mild overclocking, get a 3200+ or 3000+ (S939) because pricing on the Winchester 3500+ is supposed to be insane at the moment.
If you don't plan to do SLI in the future, consider one of the NF4 Ultra-based boards instead of the SLI.

ditch the 3500+, get a 3200+

get a 6800 or 6800GT with the $$ you save

also, get the NEC burner ts3433 recommended

Even better go for the 3000+ but if you go 6800gt or U's then get a higher wattage PSU. Other than that you have a nice wish list.

Up the power supply! The A8N-SLI requires 18A of the 12v rail. I don't think the 380 has that much.
Probabally be ok with just one 6600gt, but for anything more Up the power supply.

If you're planning on gaming, it actually makes more sense to upgrade the video card than the processor. That's why they're called GPU's, they take the load of the CPU, so, ditch the 3500, get something a little lower, and use the money to buy a better GPU. Oh, and two 160gig HD's seems overkill, save some money with that, too.
