My lazy chimichurri recipe

I love bife with chimichurri but could never find the chimichurri at the primary places where i shop: Costco and Walmart

So i'm thinking of making my own:
chimichurri requires parsley, oregano, cilantro, onion, and olive oil

costco (5 items):
1) Italian seasoning tub covers both parsley and oregano (25%)
2) chopped (dried) onion (25%)

3) 3lb tub extra virgin olive oil
4) Red pepper flakes (1%)

5) Garlic (24% of the mixture)

Walmart:
Fresh batch of chopped cilantro (25%)


Mixed dry ingredients together in bowl.
Add olive oil slightly past the top.

Doesn't sound great to be honest. Not like real chimmichurri is that hard to make.

Cilantro
Parsley
Garlic
Red onion
Olive oil
Lime juice
Red wine vinegar
Red pepper flakes
Oregano
Salt
Black pepper

The top four ingredients need to be freshly chopped. The exact quantity of each ingredient is to your taste.

This is a good starter recipe:

  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar (I use lemon juice...you need an acid in there to balance things out)
  • 1/2 cup finely chopped parsley (use about 3 tablespoons dried)
  • 3-4 cloves garlic , finely chopped or minced
  • 2 small red chilies , or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
  • 3/4 teaspoon dried oregano
  • 1 level teaspoon coarse salt
  • pepper , to taste (about 1/2 teaspoon)
If you don't mind adding a fresh ingredient, my secret ingredient is shallots (if you like onions). I don't have my chimichurri recipe perfected by any means. On a tangent, this is the only guacamole recipe you'll ever need:
