That's "foie gras". And there is indeed A Thing called pâté de foie gras specifically, but there are all sorts of pâtés, many, but not all, of which use some animals' foie as an ingredient, though most often, not something's unnaturally superfatted foie. (Regular old "pork liver" is a very common ingredient.) This Wiki article is a little oversimplified and very short on historical detail, but what there is of it is reasonably accurate...I thought pate was fatten goose liver?
