That's "foie gras". And there is indeed A Thing called pâté de foie gras specifically, but there are all sorts of pâtés, many, but not all, of which use some animals' foie as an ingredient, though most often, not something's unnaturally superfatted foie. (Regular old "pork liver" is a very common ingredient.) This Wiki article is a little oversimplified and very short on historical detail, but what there is of it is reasonably accurate...

The parts of the head used vary, but the brain, eyes, and ears are usually removed. The tongue, and sometimes the feet and heart, may be included. It can also be made from trimmings from pork and veal, adding gelatin to the stock as a binder. Sometimes it is made with nothing from the head.

As long as you don't eat the brains you should be fine.
