Aka hog's head cheese. Am I going to die of prion mad pig disease? I just bought a Nvidia rtx 2070 video card and a 35" g-sync gaming monitor. Yall can have my stuff...

"Southern pate" sounded like a euphemism for something different. Glad it worked out for you.

That's "foie gras". And there is indeed A Thing called pâté de foie gras specifically, but there are all sorts of pâtés, many, but not all, of which use some animals' foie as an ingredient, though most often, not something's unnaturally superfatted foie. (Regular old "pork liver" is a very common ingredient.) This Wiki article is a little oversimplified and very short on historical detail, but what there is of it is reasonably accurate...

I tried hogs head cheese once before. I was pleasantly surprised to say the least. And that was about 20 years ago. I'm still alive and kicking. Enjoy your new toys.
