Must do things in NOLA?

Going to NOLA in a month or so. I won't have a ton of free time, so I'm trying to do some research well in advance. What are the things I shouldn't miss while I'm there?

I went when I was a kid and have done Cafe Du Monde. I'm looking for Zydeco or other regional music, bars with lots of people, and anything else I need to see before I die.

Get a roast beef, oyster or shrimp po’ boy dressed or a muffuletta at Central Grocery or Mother’s. If you like fried seafood get a seafood platter. Don’t forget some beignets. :)

-Do the touristy steet.
-Go to the day trip plantations. Historical and interesting.
-Look up must eats and do it. It's a foodie town.
-Hit up blues/jazz bars. It's a music town.

Drink hurricane drink. Cafe du monde. Eat delicious poboy.

Get on those old school watermill boats.

Know where your shoes are at.
I'm 6'4"...if someone approaches me on the street I always give the drunk response of "Baaaahhhh" and wave my arm in a downward motion towards them. (picture a noise that Dan Akroyd as Drunken Santa from Trading Places would make) That usually scares most of them off.
