What instruments make sounds above 10khz? and what sounds would I be missing if I couldn't hear above that?

Old 78 rpm phonographs cut off at 8K. Listen to one one youtube and see for yourself. I'm not sure if there is any music above that, but I'll bet some harmonics are missing so the music probably is a bit thin sounding.

You can hear portions of cymbals above 10KHz.

Also, while singing and talking, some of the "sss" sounds occur above 10KHz.

Take a .wav music file, open it in Sound Recorder, and change it to a 16KHz sampling rate. Compare it to the original and you will hear the difference easily.

Also, while singing and talking, some of the "sss" sounds occur above 10KHz.

e.g. Rush Limbaugh. he enunciates very carefully sometimes, and his "S" sounds go ON and ON. for example, "obsolescenSSSSSSSSSSSSe", he always stretches out that last 'S'.
