I'm still running Winamp 3.x for MP3 playback because it is small and simple. I use Media Player Classic for video because it is also small and simple.

I don't have major gripes with Winamp but I would really like to have better EQ control, particularly in the <80 Hz range to tailor bass response on headphones.

What are people using these days that isn't too bloated and isn't going to try to index or organize my files?

Foobar. I don't use the EQ much, but it's a great player. Very customizable with lots of functionality (which is why it scares some people, who just want something dumbed down and pretty).

I second Foobar2000. I don't know about the EQ, as I don't use it, but it's a good simple player, that has a lot of power, without a lot of fluff.
