Multitasking/Server CPU

I am currently building a multitasking machine. I intend to run a file, media, and minecraft server in addition to everyday tasks like disk burning, music listening, movie watching, and web surfing. I am attracted to the power of the i5 3570k, however I like the price and core count on some of the new 6 and 8 core AMD FX piledriver chips. Also, I like the price of something like an i3 3220. Naturally, I want to pay less, rather than more, but my main concern is having a system that will be able to run all of the above tasks while still being snappy and responsive. Which CPU best fits my needs?

Forget the i3s. For heavy multitasking i would pick an AMD FX 8core like the 8320, they are hard to choke and kneel down with multiple programs running.

FX8320 is relatively low priced for what it offers. If you can buy one in your local store then it's no brainer for your usage model.

From the above requirements, I think a Pentium G630 would be just fine, or a 6 year old Intel quad. The i3 isn't a bad bet but an AMD chip would also work for you, though you'd either have to get a discreet card for an FX or waste the power an APU has.

I wouldnt touch non hyperthreaded Intel dualcores with a ten foot pole, they choke hard under stress, even SSDs and plenty of ram cant help them. The Core i3 is the only Intel dualcore worth considering but gets eclipsed by the FX 6300 especially in multitasking.
