Multitasking FREAK's build

Ok, Im not new to computers, I have been playing around with them since i was young. (Was using an old Tandy on my own from about age 2.. still have it around too.. not sure if it works). I built my first system (An Athlon XP 3000+ Barton) about a year and a half to two years ago. Nice little system, decent for games, but, now, it is time for me to upgrade, as i have found the processor and the graphics card cannot handle the things i want to be able to do. I Love to multitask. I like having 3 messengers up, downloads going in the background(bit torrents, normally), Thunderbird or Outlook managing my e-mails and schedule (outlook for schedule), and knobulator modding my desktop. With all of this running, my Barton likes to lag the moment i get into games, and I CANT DO ANYTHING, while im trying to scan my system. I have a gig of ram (i know, more would be better, but, i have a feeling it isnt just my processor.)

My Question is, What should i get for my next build. Dual core, for sure, i know, but, should i go AMD DC, or Intel, and which ones. I was thinking Opteron 165 OC'ed on water (i have a thing for liquid cooling, i really want it in my next system), until the FX-60 comes out, but, im not sure if an Intel Dual core with HT would be better for me.

I would definatly go for an AMD dual core. Even the new flagship Pentium Extreme Edition 955(3.46ghz 1066mhz FSB) loses to the X2 4800+ in almost everything, and it's not available in the retail market yet, while still running quite hot. Hyperthreading actualy seems to be a problem more than a benifit in a lot of cases, because windows sees 4 logical CPU's and doesn't know the differance between the real cores and the virtual ones, so can actualy slow things down instead of making it faster.
