Can it be done? I'm wondering if you can set the machine to boot to external drive and once it does have a menu of the various distro's I have on the external drive to choose and boot to.

Yes, set it in the BIOS to boot to the external hard drive then use GRUB. If you prefer a graphical bootloader use this.
