msi kt3 ultra and Raid Question

I am looking kt3 motherboard to buy. Except newegg doesn't have it in stock right now.

I was reading the KT333 roundup article by anandtech.
They mentioned that "Our biggest issue with the promise RAID controller is that it does not offer the ability to select different stripe sizes
other than 64kb and thus limits performance tremendously (64kb stripe sizes are far from ideal for most desktop applications)"

Can anyone please clarify how does the stripe size limit the performance ? Does it make the application run slower ?
Or does it just make the application use more disk space?

If it is just disk space, then it won't be a problem for me.

I want to use the computer for video editing. Is this the right motherboard for video editing ?
