Do I need to have 2 DDR400 RAM installed in order to get the Barton XP 2500+ pushed to 3200+?

512MB Corsair PC2700 Value RAM
AMD XP2500+

No, you can use Single or Dual channel configurations. It won't matter much, unless you'll be using onboard video(assuming that mobo has onboard video).
