Mouse report rate

I have a G5 wired mouse and report rate is set at 500 in the logitech mouse options. It can go up to 1000 but says it will increase resource utilization. Is 500 more than enough or ithe higher the better?

That "resource utilization" is hardly something to worry about. Sounds like something relating to "CPU usage". Unless you're using the mouse on some ancient hardware, I don't think setting the report rate to 1000, will be noticeable at best. You should be all set.

If you have at least a dual core, the CPU utilization is nothing to worry over. Though if you don't notice a difference, might as well leave it be. There is no harm in playing with it. If you are very accustomed to your sensitivity or acceleration settings, you may need to adjust them after changing the polling rate.
