Mounting a drive to NTFS folder at install

I know that after Windows is installed, it is possible to mount a drive/partition to an empty NTFS folder. For example, a second hard drive or partition can be mounted to "C:\Program Files\games", as long as that folder is empty. What I would like to know is if this mount can be specified during Windows installation. I would like to point various folders (ie: Documents and Settings and Program Files) to separate drives right from the start.
